In September 1989, Cristina Pérez and César Castillón decided to launch a food business: they opened Gaby’s, a Mexican Café serving nearby banks and government offices.
Over the years, responding to customer demand, they decided to explore a new concept in 1994, becoming pioneers of the “corrida” (a fixed-price daily lunch special) in Puerto Vallarta. It was a resounding success, attracting city council members, bankers, executives, local business owners, and tourists.
Their success has been remarkable; what began as a small patio at the entrance of their home has evolved into a favorite restaurant for many. This growth prompted them to expand the restaurant into part of their home, and for the past 18 years, they have also offered dinner service.
In 2010, Chef Julio César, a gastronomy graduate and the youngest son of Cristina and Cesar, took the helm of the business. Fully committed to quality and service, he has used his youthful energy to add his own personal touch and introduce menu changes that showcase the best of traditional Mexican cuisine from their Vallarta location.
